Earl Grey Infused Gin Sour

The Earl Grey Gin Sour is an elegant cocktail that surprisingly combines the delicious taste of Earl Gray tea with the refreshing notes of gin and lemon. This drink is perfect for those looking for a refined twist on the traditional Gin Sour. Let's see how to make this delicious cocktail.

Earl Grey Infused Gin Sour

INGREDIENTS EARL GREY GIN SOUR:

  • 45 ml (1.5 oz) Earl Gray Infused Tea Gin*
  • 20 ml (¾ oz) Lemon juice
  • 30 ml (1 oz) Monin Cane Sugar Syrup
  • ml (1 oz) Liquid Protein

PREPARATION OF THE EARL GREY INFUSED GIN:

  • Start by making the Earl Grey Tea Infused Gin. This will add an extra depth of flavour to your cocktail.
  • Take a bottle of gin of your choice and add loose Earl Gray tea leaves. Use approximately 1.5 to 2 teaspoons of tea leaves per 100 ml of gin (10-12 in a 750 ml bottle).
  • Close the bottle and let the tea leaves steep in the gin for at least 2 hours. You can also let this process take place overnight for a more intense flavour.
  • If necessary, strain the gin to remove the tea leaves. To maximize the aromas, seal the infused gin in a separate bottle under vacuum.

INFUSE UNDER VACUUM

Don't feel like waiting? Create a vacuum on the bottle of gin with tea with the Airtender Electric or hand pump and a Nanostopper. This shortens the above infusion process to 20 minutes to a few hours. This is because the vacuum lowers the air pressure, allowing the ingredients in the liquid to be absorbed more quickly.

  • Fill the glass with ice cubes.
  • Add the Earl Gray Infused Tea Gin, lemon juice, Monin Cane Sugar Syrup and liquid egg white.
  • Stir the cocktail with the Airtender Aerator and add air several times to froth the cocktail.

SERVE IN A MARTINI GLASS?

Make a pre-mix of the cocktail excluding the egg white and keep it cold so you don't need ice. Pour the cocktail premix into a martini glass, add the egg white, stir with the Aerator and foam the cocktail as explained above.
